We continued the honey bee journey this week, meeting with Miles and Jacqui Happ from Icon Honey, and also with Southern Forest Honey to explore the Colony concept.
The Colony Concept
Set in Metricup farmland, The Colony Concept is home to a restaurant, retail space and bee education. The brainchild of the Southern Forests Honey team. The Colony Concept is a celebration of honey and all things honey related.
Icon Honey
Icon Honey, run by Jacqui and Miles Happ, offers beekeeper direct, raw honey. Icon Honey prides itself on being migratory beekeepers that seek out varietal honeys.
What is better that a spoonful of delicious raw honey? Raw honey spread on freshly baked bread! We met with Gotthard Bauer from Yallingup Woodfired Bakery onsite at Origins Market to work out the location of his wood fired oven.
Yallingup Woodfired Bakery
Yallingup Woodfired loaves are made from locally grown, biodynamic grain and utilise traditional, minimal intervention methods. Eschewing the traditional early morning start, the dough is made in the morning and ready by 3.30pm – but be warned, with locals setting alarms to ensure they secure a loaf, it’s first in best dressed!
